Grandma's Soft White Cookies

I love to bake. A long time family fav is a recipe from the Mennonite Treasury called Grandma's Soft White Cookies. Here it is:

2 Eggs
2 cups sugar
1 cup shortening
1 cup milk
5tsp baking powder
1tsp baking soda
1 tsp vanilla
1/4 tsp salt
Enough flour to make a stiff dough (don't you love it when the ingredients are not measured, ;))



Cream shortening (my mom taught me to use 1/2 cup marg or butter and 1/2 cup lard)
add sugar and eggs, beat well.

Then add alternately the flour sifted with the baking powder, soda, salt with the milk.

Roll out, but not thinly, about 1/4" thick. Bake at 375 until done, ha ha that "until done" what does that mean to someone that doesn't usually bake. I think the Mennonite cook book was made only for the seasoned bakers or cooks. I baked mine for 13min at that temp. although my oven doesn't get as hot as some.


After the cookies have cooled ice with:
Icing Sugar recipe below

2 cups icing sugar
blended with 1 tbsp marg or butter
1 tsp vanilla
enough milk to make spreadable consistency.
